You may have noticed I have a disproportionate amount of primal "treats" on this blog. It's a weakness. I'm working on it.
I've mentioned before that my son is allergic to eggs and almonds. Unfortunately almost every grain free baked good recipe I could find called for a huge amount of eggs. So I decided to come up with a cookie recipe myself that my son could enjoy.
I'm really happy with the way these turned out! Even my mom, who does not eat primal, said they were good.
Grain Free, Egg Free, Chocolate Chip Cookies
2 cups walnut meal. - I just put walnuts in a food processor to make this
2 tablespoons ground flax seeds
1/4 cup coconut flour
3/4 cup applesauce
1/2 cup coconut oil
1 teaspoon vanilla extract
1/2 cup chocolate chips
Preheat oven to 350 degrees. Mix all the ingredients together in a bowl. Roll dough into 1 inch balls and flatten with your palm into a cookie shape. These don't change shape much in the oven. Place on a cookie sheet and bake at 350 degrees for about 15 minutes or until the edges start to turn a golden color. Makes about 16 cookies.
